Happy Tuesday!

We’ve been busy-busy adjusting to our new jobs & developing a new schedule <3.

One of my main goals to include in our new routine is more healthy home cooked meals.

Brett & I tackled the recipe below, the fresh ingredients were a welcomed change to our norm (;



8 ounces whole wheat penne
2 limes, juiced to yield ¼ cup juice
2 teaspoons honey
1 Tablespoon mild chili powder
1 teaspoon cumin
1/8 – ¼ teaspoon cayenne pepper (adjust by your personal preference)
1 teaspoon kosher salt
½ teaspoon black pepper
¼ cup olive oil
½ bunch of fresh cilantro leaves (roughly chopped)
2 cups corn kernels, from 2 ears of corn *See prep guide below
1 – 15 ounce can organic blackbeans, drained and rinsed
6 ounces of cherry tomatoes rinsed and cut in half


1. Heat a large pot of water with 2 pinches of salt and bring to a boil – add in pasta and cook until al dente (8‐9 minutes)

… while pasta is cooking …

In a small bowl, whisk to combine lime juice, honey, chili powder, cumin, cayenne pepper, salt, pepper & olive oil (set aside)

2. Drain pasta and cool slightly

3. In a large bowl, combine pasta, cilantro, corn, black beans, and tomatoes – toss with dressing to taste

4. Serve warm or at room temperature

{Tip: when dressing pasta with any kind of sauce or vinaigrette, it’s important to toss the pasta when it’s warm, not hot. If the pasta is hot it will absorb all the sauce at once, but if you wait until it cools slightly you can use less sauce and it will have better flavor. You will find that if you hold it for too long before it’s dinner time, the pasta will drink up all the sauce.}

*corn prep guide: cook corn, cool, and remove kernels.

*To boil corn
Place shucked corn into a pot of boiling water and cook for 3‐6 minutes or until kernels are tender.
Cool, then with a knife cut downwards from top to bottom to remove kernels.

*To grill corn
Shuck corn and lightly brush with grape seed oil. Place onto grill and cook for 3‐4 minutes, turning often to avoid burning.
Cool, then with a knife cut downwards from top to bottom to remove kernels.

Blue Moon

When I lived at home with my parents – it always brightened my day when my dad would turn his music on downstairs in the living room. The melodies would dance all through the house, making it impossible not to smile. Below is one of my favorite classics <3.

Yes, its true – Brett & I both accepted new jobs in the same month! We’re truly blessed & thrilled to start this new journey – Brett is a week into his new opportunity, and although he’s excited to learn the operation side of the business … his new schedule will take some adjusting (for both of us!). I start my new role Monday … I’m ready for the challenge!

Weekend @ The Lake.

The only way to properly welcome an unexpected cool front …  take full advantage with a camping trip <3.

 Adults (Dad, Pam-la, Brett & I) playing on a children’s playground was by far the funniest memory made. Going for walks, watching a sunset go all the way down & listening to good tunes were also treasured moments.

My Labor Day

Most people enjoy grill-outs, a summer day at the lake & spending time with loved ones while looking forward to a short work week. For me, Labor Day, is when I lost 2 of my best friends – Mike & Bobby <3.

Trust me, I’ve spent way too much time deciding whether to publish this post or not, but at the end of the day writing helps me release…

September 1, 2012 marks 10 years since the world lost 2 carefree, intelligent best friends and heaven gained 2 of my life treasures. It’s been an entire decade since I saw them face to face, and I feel just as broken as September 1, 2002 when I was told I wouldn’t see them again.

My heart will never heal, nor do I want it to. I believe the guilt I feel from walking away from that car wreck is my drive in life – I want to make them proud.

This year, I prayed … not for comfort, not for peace, but for purpose. Do you know what God told me … tell people why you admired them so much.

One of my favorite quotes: “Some pursue happiness, other create it” – describes one of my favorite characteristics in Mike & Bobby perfectly. It wasn’t about what hand they were dealt, it was what they could create from it. They were both in high school with real dreams … a vision. When I was thinking about what to wear tomorrow, they were making plans & achieving their goals. Mike and Bobby both pushed me to be my best. I enrolled in hard classes and always had a job to prove myself to the world. I adored them both, but I also loved who I wanted to be when I was around them. They wanted me to succeed, and I can’t say that about many of the friends I’ve had in my life.

I can feel my emotions filling my body … it’s so difficult to talk about them, I want to be strong, but all I feel is my weakness.

I don’t expect anyone to understand, I can’t dissect it myself ❤
